> President's Day Activities Cherry Thumbprint CookiesPresident’s Day is a day of celebration. This is a great day to teach your children about the history of our presidents and why they are so important to the freedom we have in our country. It doesn’t all have to be about studying a book or reading about our presidents though. One way to teach your child about George Washington is to talk to them about his adventure with chopping down the cherry tree. Then serve them some cookies to put a twist on the story. These cookies are right up that alley and can be fun to make while giving them a history lesson about the first President. What You’ll Need* 1/2 C butter, softened* 1/2 C sugar * 2 tsp. vanilla * 2 eggs, separated * 1 1/2 C all purpose flour * 1 C chopped pecans * Cherry Preserves DirectionsPlace the softened butter and the sugar into a large mixing bowl. Use your electric mixer on medium speed to cream the butter and sugar until fluffy.Add the vanilla and egg yolks. Mix on low speed one minute. Gradually add the flour beating the mixture on low speed after each addition. When all the flour has been added, return the mixer to medium speed and mix until all the ingredients are completely blended together. Cover and refrigerate one hour so the dough will firm up and be easier to handle. Preheat oven to 350 degrees. Remove the dough from the refrigerator. Pinch off enough dough to form a small ball. Roll the ball in the egg whites first and then in nuts. Place the ball on a cookie sheet that has been sprayed with a non-stick cooking spray. Use your thumb to make an indention in the middle of the cookie. When the cookie sheet is full bake the cookies for 10 to 12 minutes or until lightly brown. Allow the cookies to cool on the sheet for 2 minutes before removing to a wire rack to continue cooling. When the cookies have cooled to room temperature then place a small amount of the cherry preserves in the thumb indention to finish the cookies. |
