Halloween Breakfast Muffins

It’s Halloween morning and it’s time to get those kids up. Wouldn’t it be fun to wake them and serve them a spooky breakfast? Their little eyes will widen when they walk to the table and see their breakfast on a cobweb plate with spiders and all. Here’s how to do it.

What You’ll Need

* 1 1/3 cup all purpose flour
* 3/4 cup buckwheat flour
* 1/3 cup sugar
* 1 1/2 teaspoon baking powder
* 1 teaspoon pumpkin pie spice
* 2 eggs
* 1 cup canned pumpkin
* 1/2 cup milk
* 2 tablespoons canola oil
* 1/2 teaspoon orange peel
* 1/4 cup orange juice
* Red, black, orange, white and green decorating gel
* Halloween baking cups
* Cotton balls
* Plastic spiders

Directions

Make the muffins by combining flours, sugar, baking powder and pumpkin pie spice together in a large bowl. In another bowl mix together eggs, canned pumpkin, milk, canola oil, orange peel and orange juice. Add egg mixture to dry ingredients and stir just until dry ingredients are moistened. The batter will be slightly lumpy. Preheat oven to 400 degrees. Place baking cups in a muffin tin. Fill cups 2/3 full of pumpkin batter. Bake 15 to 20 minutes or until muffins start to brown slightly and toothpick inserted in the center of muffins comes out clean. Remove muffins and place on wire rack to cool.

Decorate the cooled muffins by using the decorating gel. You can make bats, ghosts, pumpkins, tombstones, and a scary witch or just about anything you desire on the tops of the muffins. Don’t remove the baking cup from the muffin until your children are ready to eat the muffins.

Now for serving the muffins. Take the cotton balls and pull them until they look like a spider web and will fit the size of a saucer plate. Place the spider web on the plate. Place a couple of plastic spiders in the web and the muffin right in the middle. Won’t you hear the screams when those little ones come out for breakfast? What a great way to start out their Halloween day.
